This simple Asian Tomato Ginger Lime Salad is a refreshing side accompaniment that will compliment just about any meal.
Most times, fresh ingredients require so little adornment that you can simply eat them raw and slightly seasoned if desired. Last week, I made a Fresh Citrus Fruit Salad that demonstrated how beautiful yet simple it can be to showcase the finest fresh citrus fruits.
Today, I’ve got another simple salad, made with just organic cherry tomatoes, scallions, fresh ginger and lime juice. Seasoned with the slightest hint of sea salt and a few cranks of freshly ground black pepper, this tomato salad will go with just about any meal you serve.
Later this week, I’m going to show you how I served this Tomato Ginger Lime Salad. Hint: It has something to do with the Filipino Garlic Fried Brown Rice I shared a few days ago.
- 2 cups cherry tomatoes, halved
- 2 scallions, green parts only, thinly sliced
- ½ teaspoon ginger, finely minced
- juice from 1 lime wedge
- sea salt and fresh ground black pepper, to taste
- Toss all ingredients together and serve.
